While it is too bitter to be enjoyed raw, it reveals an unparalleled aromatic complexity when cooked, with deep citrus notes, refined bitterness, and a powerful, captivating fragrance that sweet oranges simply cannot match. This variety produces the finest marmalades, which are sought after by true enthusiasts.
Made with 35% bitter oranges and cane sugar, our marmalade is cooked in an open copper pan using our traditional method. The finely sliced peel of the Seville orange simmers gently with the pulp and juice. The result is a luminous amber marmalade dotted with delicate strips of candied peel that provide texture and an elegant bitterness. The balance between the sweetness of the sugar and the bitterness of the orange is carefully judged to deliver a flavour that is both forthright and refined.

This intimate knowledge is evident in our marmalade, where the Seville orange is handled with the expertise of a confectioner who knows how to tame bitterness and draw out its finest qualities.
This bitter orange marmalade is an ideal breakfast companion and pairs beautifully with black tea. It enhances duck à l’orange, elevates a sauce for white meat, and adds depth to a chocolate dessert.
