Mini calissons with candied ginger — crystal box

With this mini ginger calisson, our company offers a bold take on the traditional calisson of Provence. The recipe respects the fundamentals that have built our reputation over five generations — a mixture of almonds and candied fruit under a thin glaze — while introducing candied ginger, whose warm, slightly spicy note enhances the sweetness of the almond.

The almonds from Provence are grown in our own orchard of 2,150 trees, which were planted in 2016 near our confectionery in Saint-Rémy-de-Provence. We control every stage, from harvesting and cracking to pruning, to ensure that the almond kernels retain their freshness and aroma. The ginger is candied by hand alongside candied melon using our traditional method, which adds a fruity roundness to the whole recipe.

This combination of flavours creates a melt-in-the-mouth calisson with a fragrant, surprising flavour and a remarkable finish. Their bite-size format makes them ideal for enjoying with coffee, as a dessert or as part of a petit four selection. Presented in crystal boxes containing 10, 24, 48 or 72 pieces, these mini ginger calissons will appeal to those who love bold flavours.
