Since 2009, Maison Lilamand, a confectioner based in Saint-Rémy-de-Provence, has perpetuated this tradition by producing calissons renowned for their melt-in-the-mouth texture, delicate flavour, and natural elegance. 

Under the direction of Pierre Lilamand, a fifth-generation confectioner, each calisson is crafted using traditional methods involving slow, precise and masterful mixing, as well as gentle cooking. This expertise, which combines confectionery and patisserie, has been passionately passed down for over a century and a half.

Lilamand calissons: expertise born from candied fruit

At Lilamand Confiseur, calissons are more than just a sweet treat; they are an expression of the company's core business of candied fruit, which has been at the heart of the business since 1866.

The fruits used in their production, such as candied melon, apricot, orange and pear, are sourced from the company's own workshops.

These candied fruits are then crushed and combined with carefully selected Provençal almonds to create a smooth, fragrant paste.

This close connection between candied fruit and calissons gives each Lilamand creation a unique identity, striking the perfect balance between sweetness, freshness, and aromatic intensity.

The flavour of the fruit is carried by the roundness of the almond and the delicacy of the royal icing.

Traditional artisanal production

In the Saint-Rémy-de-Provence workshops, each step is carried out with the utmost care.
The almond and candied fruit paste is placed on a thin wafer sheet and covered with delicate icing, which is prepared by hand.

After slow drying at a low temperature, the calissons reveal their distinctive texture: soft in the middle and smooth and shiny on the outside.

Nothing is industrialised. The confectioner pays close attention to the colour of the icing, the consistency of the shape, and the flavour of the paste.

Each calisson is the result of precise movements, attention to detail and respect for time.
