Traditional calissons — crystal box

Introduced to Provence in the 15^(th) century, the calisson is one of the most iconic confections of southern France. At Lilamand, we produce them by combining two areas of expertise that we are particularly proud of: candied fruit, which has been our speciality for five generations, and almonds from Provence, which we grow ourselves.

In 2016, we planted 2,150 almond trees near our confectionery in Saint-Rémy-de-Provence. Since then, we have controlled every step of the process, from growing the orchard and harvesting to breaking the almonds in our own cracking facility and pruning the almond kernels in our workshop. This approach allows us to preserve the taste, flavour and aroma of fresh almonds as much as possible. The candied melon and candied orange peel used in the recipe are also prepared in our workshop according to our traditional artisanal method.

The combination of these exceptional ingredients creates a melt-in-the-mouth calisson with a fragrant, generous flavour, topped with fine royal icing made from egg white. Each piece is presented in an elegant crystal box, available in packs of 12, 24 or 36 calissons. These calissons are made with 100% Provençal almonds by a company recognised as a Living Heritage Company and Master Craftsman.
