Traditional calissons — diamond-shaped box

The diamond-shaped box is the most authentic of our boxes. Its distinctive shape evokes the calisson itself and the confectionery of yesteryear. This nostalgic format also appeals to us because it tells the story of a living, delicious Provençal tradition.

Each calisson inside is the result of family expertise passed down through five generations in Saint-Rémy-de-Provence. We make them using almonds from our own Provence orchards, where 2,150 almond trees were planted in 2016 on the outskirts of our confectionery workshop. We control every step, from the orchard to the workshop: harvesting, breaking and cracking the almonds, and pruning them by hand to preserve their freshness and aromatic intensity. Candied melon and orange peel, prepared in our workshop using our traditional method, complete this time-honoured recipe.

This produces a melt-in-the-mouth calisson with a fragrant, generous texture, topped with a fine royal icing.
