In Saint-Rémy-de-Provence, our family has been preserving the art of artisanal candying for five generations. Each fruit is sorted, peeled by hand, and then slowly candied in successive boilings for three to four weeks. This patience allows the syrup to gradually replace the water in the flesh, while preserving the original flavor and color. After a minimum of two months of aging in our fruit cellar, a final glaze gives each fruit its characteristic shine and melt-in-your-mouth texture.
