An invitation to travel… Fruits from the Indian Ocean, Asia and the Caribbean come to be candied in Provence ! Imitating their local “confrères”, Apricots, Pears, Figs… by perfuming with their juices the syrups in which they bathe during several months. The greedy desire to concoct a recipe to taste them is not a sin, it is just to escape !
