Only a candied fruit maker could have imagined this speciality. Our artisanal candied fruits — strawberry, melon, clementine, cherry, fig and pear — are preserved in their candying syrup to create a smooth, indulgent confit containing 60% candied fruit. The syrup can also be reused as a topping syrup.

This confit is a creation that could only originate from a candied-fruit confectioner. While our jams combine fresh fruit with cane sugar, this recipe takes indulgence a step further. It is based on our own artisanal candied fruits, which have been prepared in our Saint-Rémy-de-Provence workshop since 1866.
The result is a confit of singular richness, reminiscent of a traditional “confiture de vieux garçon”. The candied fruits — strawberry, melon, clementine, cherry, fig and pear — already infused with sugar and concentrated flavour through our traditional candying process, are preserved in their candying syrup to create a smooth, intense confit. This reveals the full gourmet palette of our house, with a harmonious blend of candied fruits melting together into a generous texture and enveloping flavour. With 60% candied fruit, each bite delivers an intense burst of flavour.
This candied fruit confit is pure indulgence — a joyful nod to Provençal sweet traditions. It embodies the direct link between our historic speciality of artisanal candied fruit and everyday pleasure. Five generations of confectioner expertise are condensed into a single jar.
It pairs beautifully with fresh cheese, enhances homemade desserts or elevates crêpes. The candying syrup can also be reused as a topping syrup to drizzle over desserts, cocktails or crêpes.
