An iconic Maison Lilamand product since 1866, the whole candied melon is at the heart of our confectionery. It is made from a rare and prized variety: the traditional Proven\u00e7al cantaloupe melon, which has been cultivated by confectioners for generations for its firm flesh and unique character. When fresh, its pale skin and deeply indented shape are more reminiscent of a squash than a typical melon. It is the candying process that brings it to life, slowly nourishing it with sugar syrup until it gradually takes on a deep orange colour and reveals its full aromatic power. \nEach melon is peeled by hand, much like sculpting stone. The confectioner uses a knife to remove a millimetre of skin, following the fruit\u2019s curves. This process takes ten minutes of patience and precision to avoid tearing the melon and preserving its original shape. This rare skill is mastered by only a handful of artisans in France today.
\nOur devotion to this melon extends even to its seeds: we select the finest fruits to preserve them, entrusting them to a farmer in the Apt region who perpetuates this heirloom variety year after year. It is a true chain of expertise that safeguards a living heritage.
\nThe result is an edible work of art. Translucent in the light and luminous orange in colour, the candied melon reveals the delicate pattern of its seeds beneath its flesh.
